Pumpkin Cobbler

 Crust
1 package yellow cake mix
1 egg
½ cup butter (softened, not melted)

Mix with fork.  Put ½ of mixture in 9x13 pan and cook 6-8 minutes at 350 F.

Filling
Mix the following ingredients together in a blender till smooth:
3 cups pumpkin (Libby’s 29 oz. can)
¾ cup milk
1 cup sugar
2 eggs
1 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon salt

Pour pumpkin mixture over crust.

Topping
Add the following ingredients to the remaining crust mixture and mix with a fork:
½ teaspoon cinnamon
¼ cup brown sugar
¼ cup butter
Handful oatmeal
Chopped walnuts

Sprinkle on top of pumpkin.  Bake at 350 F for 45 minutes or until toothpick is clean.
